Ingredients:

  • 1 cup of red lentils, washed 3-4 times
  • 1 medium sweet potato, peeled and diced
  • 1 medium yellow onion, diced
  • 2 cloves of minced garlic
  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 4 cups low-sodium vegetable broth
  • 1 (14.5 oz) can of diced tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tsp of turmeric powder
  • 1/inch ginger grated
  • 7 cups of water

Preparation:

After you have prepared all of your ingredients, go ahead and add them to the instant pot, close the lid and make sure to set the valve to sealing. Press the “pressure cook” button and set the timer for 15 minutes. Once the timer goes off, remove the valve to do a quick release so that it begins venting.

Stir and taste for seasoning, add in more salt if needed, and serve hot. You can garnish with some fresh parsley leaves and also make sure to add in some fresh lemon juice, it just makes it taste amazing!

Sauteed Version

If you do not like the taste of steamed onion and garlic, you can use the saute mode on the pressure cooker and saute them before adding in the rest of your ingredients.
