Spicy Southwest Chicken Detox Soup
This is a high-fiber, high-protein soup which means, you can expect to visit the potty at least once or twice after eating it. It is great for digestive health and will keep you feeling full longer during the day thanks to the protein.
Ingredients for 8 servings | prep & cook time: 50 minutes
- 2 cups of chicken breast (cooked & shredded)
- 1 tablespoon of organic coconut oil
- 1 tablespoon of olive oil
- 1 large onion (chopped)
- 5 garlic cloves (minced)
- 1 small cabbage (chopped)
- 3 medium carrots (chopped or sliced)
- 2 cans of chopped green chilies
- 2 cans of crushed tomatoes
- 4 cups of low-sodium chicken broth
- 2 cups of broccoli florets
- 2 avocados (peeled & diced)
- 1 teaspoon of cayenne pepper
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground turmeric
- salt (optional)
How To Make This Chicken Detox Soup
In a large soup pot, heat the olive oil and coconut oil over medium-high heat. Add in the onions and saute them until light brown or soft. Throw in the garlic and stir with the onions until fragrant.
Now add in the chicken stock, carrots, broccoli, green chilies, tomatoes, and cabbage. Half cover the pot lid and increase the heat to let the soup come to a boil. This should take around 20 minutes.
Finally, add in the chicken breast, paprika, cumin, cayenne pepper, turmeric, and salt, and lower the heat. Let the soup simmer for an extra 10 minutes to combine the flavors.
Garnish with diced avocados, and chopped parsley and serve while still hot. You can also add half a cup of low-fat coconut milk as well before serving but that’s completely optional.
