You are going to enjoy eating every last bit of this soup. I know they say detox recipes are bland but not this one, this kale detox soup is delicious. I recommend not adding extra salt cause even a dash can increase the sodium levels of this soup and that’s bad for inflammation.

Ingredients For 6 Servings | Prep & Cook Time: 40 minutes

  • 1 tablespoon of organic coconut oil
  • 1 tablespoon of olive oil
  • 1 medium onion (chopped)
  • 5 garlic cloves (minced)
  • 1 medium broccoli (cut into florets)
  • 1 medium cauliflower (cut into florets)
  • 4 celery stalks (chopped)
  • 3 medium carrots (chopped)
  • 2 cups of fresh baby kale (chopped or shredded)
  • 6 cups of low-sodium chicken broth
  • 2 cups of hot water
  • 2 cups of chicken breast (cooked & shredded)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ginger powder or 1 inch of ginger root (minced)
  • 1/2 teaspoon of smoked paprika
  • a dash of black pepper
  • a dash of sea salt (optional)
  • 1/2 cup of coconut milk (low-fat)
  • 2 lemon juice (freshly squeezed)
  • 2 slices of fresh lemons (to garnish)

How To Make This Kale Detox Soup

In a large soup pot, heat the coconut oil and olive oil over medium-high heat and sautee the onions until light gold. Add in the garlic and stir for 30 seconds, add in the carrots, broccoli, cauliflower, and celery. Stir fry the vegetables for at least 2 minutes.

Add in the chicken broth, hot water, salt, paprika, ginger, garlic powder, and black pepper, stir, and half cover the pot. Increase the heat to high and let the soup boil until all the vegetables are cooked through.

Finally, add in the lemon juice, kale, chicken breast, and coconut milk, lower the heat, and let the soup simmer for an extra 10 minutes. Cut off the heat, serve in soup bowls while still hot, and garnish with lemon slices.
