This chia seed pudding recipe can be made for breakfast or eaten as a mid-morning snack to keep you full all day long. This recipe will also be needed to make overnight to eat the next day, you don’t have to but it tastes so much better.

Ingredients:

  • 2 tablespoons of chia seeds
  • 1/2 cup of coconut milk
  • 1 teaspoon of vanilla extract
  • 1 cup of greek yogurt (zero-fat optional)
  • 2 tablespoons of raw organic honey (optional)

Preparation:

Mix the yogurt, coconut milk, vanilla extract, and honey into a bowl until well incorporated, add in the chia seeds, and continue to mix for an even mixture. Divide your pudding into serving cups or bowls and put them in the fridge overnight. I like to top my chia seed pudding with sliced oranges or blueberries but it’s purely optional.
